There is a Spanbish saying: "carne en calceta para quien la meta" a bit hard to translate, but few Spaniards buy anything minced as you're never sure of what you really get. Better stay away, buy the meat and mince at home.

You can choose whatever you like in the butchery counter and ask for it to be minced for you there and then.

I was worried about buying it too as there was that scandal about some regional dish which caused food poisoning all over Spain.. In France the supermarket butchers take lean fresh /cold meat and mince it in a freezing mincer...and they always say to either eat it the day you buy it or freeze it... I think I need to buy a mincer for Spain!

"We just buy 'carne picada' from the chiller cabinets in the various supermarkets.

They do specify Vacuno, Cerdo, or Picada Mixta, so you do know what you are getting."

Also a little label which explains the list of additives. ref: https://www.ncbi.nlm.nih.gov/pubmed/9490194

BACKGROUND:

In view of the development of harmonization provisions for food legislation with regard to additives, the aim of this study is to find out the use of sulfites in pre-packed minced meats and meat products prepared in establishments located in the Valencia Region.

METHODS:

Following planning of the types of products and number of samples to be researched, the results obtained were evaluated qualitatively and quantitatively for the presence of sulfites, expressed in mg/kg of SO2.

RESULTS:

The presence of sulfites was found in 65.38% of the samples of beef and pork burgers and in 64.18% of chicken burgers. Minced meat.

CONCLUSIONS:

The extensive use of sulfites in prepared meat products was observed. The imminent application of Community legislation will bring lead to a modification in the practices when preparing these products.

In other words as Stephanie86 states above "You can choose whatever you like in the butchery counter and ask for it to be minced for you there and then".

That´s how I buy my mince.

But what you have to ask yourself is how many of us have dropped dead as a result of buying pre-prepared mince!!!! And Spanish meat may well be ‘fresher’ as a result of not being hung, but that also means that, with apologies to the famed Galician beef producers, that none of it tastes of very much.

More food poisoning happens as a result of poor handling in the domestic kitchen than happens as a result of industrial contamination in most highly regulated Western meat production facilities. The question of whether one wishes to consume the usually more distasteful cuts generally used for ‘mince’ is a completely separate issue; however, what is deemed unpalatable by one country is not necessarily perceived as such by others. But given the stringent hygiene standards here, if buying from a reputable source, contamination is unlikely.

RayD. Like what you like. I try to avoid chlorinated water, chicken & sulfites. It´s preference. Also, I prefer Spanish sausages, & meat, compared to my memories of UK style, 1997 & beyond,
