We live in the huerta between Callosa and Rafal, and in 11 years we've never found anywhere good to eat in Callosa. For a basic menu del dia, you could try the petanca club off the road up to the Ermita de Nuestra Sra del Pilar.
When you're out here, ask again and I'll give you some recommendations for restaurants in Almoradi, Benejuzar, Benijofar, etc etc.
If you're fit, the ascent of the Sierra de Callosa is a bit of a challenge, but surely a 'must do' for anyone who's up to it.
I'm not into social events or sports, so can't help you there - sorry.
The leisure centre is pretty good if you want to swim, keep fit etc.

There is a good market on a Wednesday in Callosa. The outdoor pools are open now until September and are a very pleasant way to spend some time. I am not aware of any sports activities but the sports centre would have details (closed in August). There are a few restaurants where you can get a reasonable Spanish meal and plenty of bars. There isn't a lively social scene here but plenty of places are within driving distance. I have lived here for 6 years and love it.

The town hall run some courses but they are usually around 9pm in the evening. There is a very good lady in Jacarilla called Jane Cronin who runs courses and is excellent. Pm me and I will give you her details.
