Been living/working in Ireland for 14 years, having a career break and want to spend 6 months of it in Alicante area from November but finding it difficult to find info on which visa I need to stay longer than 90 days without applying for residence. Response from Spanish embassy in Dublin not helpful so far. Schengen tourism visa?

There is no 6-month visa.

There is 90/180 or the Non-Lucrative Visa (Residency) ... nothing in between.
