The problem is that you need the travel restrictions of both the UK and Spain to align. It would certainly be helpful if the UK government would publish its 'Green' list of countries to which you can travel - UK media seem to have mixed views, but the airline industry is optimistic that Spain will make it on to the Green list.
When the Spanish government lifts its State of Alarm on 9th May, we're assuming that this will enable UK citizens, who are not resident in Spain, to resume travel here, but that has yet to be formally announced. At that time, responsibility for ongoing Covid-19 restrictions will rest with each of the regional governments, so you need to be aware of those too. Currently, in Comunudad Valenciana, the restrictions include regional border closure, curfew, mask wearing in all settings, restrictions on bar and restaurant opening times and capacities - these are all manageable if you're coming out just for a local visit, but not if you're hoping to tour the country 😄
