My Wife and I, once retired, plan to move to Benidorm and I have idea of selling icreams from a small icebox on a bike(this popular in UK resorts). This will be only on a caravan site where we hope live, but is a licence required and what us it called? We are a few years away yet, but just trying to get ideas

If you only do it on private property then you won't need a license from the town hall; you just need to include the net income on your tax return.

To sell in public areas you would need a license from the town hall and you'd need to register as autonómo (self-employed).

It’s not just the selling though, is it - surely, making something home-made from milk products in Spain would need some hygiene checks on the production by an environmental health agency equivalent ?

Sounds as though you need to have a look at the Citizens Advice Bureau Spain site as they have answers to many queries that you will have.
