Pizza making
Can anyone tell me where I can learn how to make pizzas, starting with the dough upwards, I’m want to learn to cook them in a wood fired oven, I’m near guardamar & would help a few nights in a restaurant to learn if possible?

There will be lots on instructions online. It is really not very difficult once you have learnt how to make bread, which is all it is. It was originally a way for thrifty housewives from Naples to use up leftover bits of bread dough. The simpler the toppings, the better, avoid like the plague these perfectly horrendous combinations such as ham and pineapple which would make an Italian shudder. You can in reality put any combination of anything you like on it, but it’s usually some kind of basic thick sauce such as a heavy tomato with a scattering of whatever bits and pieces you may have stylishly placed on the top! Less is more!

Hi, I bought a book called DOUGH by Richard Bertinet it has a brilliant pizza recipe in it, i have used this recipe for the last 10 years, also we have just bought an Ooni pizza oven which is absolutely brilliant, cooks a pizza in 1 (one) minute just don't turn your back on it while cooking as it will burn!! hope this helps, cheers Martin
