I'm afraid it's much more difficult for UK citizens to do this since we left the EU. Retirees are still able to come over on a Non Lucrative Visa but, as the name suggests, you´re not allowed to work. The alternatives for Third Country Nationals wanting to work in Spain are to, a) set yourself up as "Autonomo" (self-employed), but you have to make social security contributions, starting at €60 per month, rising to €300 per month, even if you don´t earn any money in a month, or b) secure a work contract with a Spanish employer, who would need to apply for a Work visa for you. The problem with this latter option is that all work contracts have to be offered to a Spanish or other EU national first.
A bit of a longshot, but do you have any Irish ancestry (a parent or grandparent) that would enable you to apply for an Irish passport? The requirements for people with an EU passport to move to Spain, or another EU country, are much easier than the post-Brexit rules.
