Without wishing to be unkind, if you do not hold Residency you should not be on the Padron. As you may know, the Padron is a file of all permanent residents in a town or village. Some towns halls were happy to enrol holiday home owners on the Padron because it meant they got a larger budget grant from Madrid. Whether that will be tightened up next year, who knows...I suspect not.
In a worst case scenario, showing a border guard a Padron could lead to being asked to produce your Residencia card.
If I was stopped in your circumstances I would show a utility bill for my Spanish home and have the Escritura handy just in case.
As to travel restrictions, there is definitely a midnight to 0.600 curfew in Valencia province, but I'm not certain about Catalunya. Someone will know.
If you stick to the AP-7 etc you should be fine. I think the Guardia and National Police are more fixed on serious crime than hassling the odd tourist heading south.

Edit to add. Do not stop for any unmarked car on the motorway. Police will not flash their lights at you as an attempt to stop you. Do not stop because someone is pointing at your vehicle indicating there is a problem with it. If police want to stop you they will use a marked Trafico car or van using flashing blue lights. Such a stop of a moving vehicle is extremely rare.
When stopping at a service station for a meal break or petrol fill, do not leave anything on the seats or visible in the car. Try to park as close to the building windows as possible. When leaving or returning to your vehicle be highly alert for distraction crime. This is where one person attracts your attention while the other unseen person robs the visible contents.
