Can anyone advise exactly what documentation should be carried in a private vehicle in Spain.

Hello John hope you are well.

Would you be able to continue driving if someone broke into your car and stole all your documents? I would guess it would take weeks to get them all replaced.

Then do as the website suggests and get copies certified by a Notary so you have the originals in a safe place.

I doubt many thieves break into cars simply to steal their documents but if the possibility does worry you then there must be dozens of places about most cars where you could secrete them. 

If somebody did indeed break in just for those then if they didn't immediately find them in the glove box they are hardly likely to hang around and search but will scarper and try their luck elsewhere.

You must have the Permiso, Tarjeta and, if applicable, the paper counterpart of the ITV test. If any of these are stolen, then you would presumably have done a denuncia at the Guardia Civil to report this, so carry this denuncia in the car whilst you are obtaining replacement documents.

It is also advisable to carry the insurance, proof of payment of this, and proof of payment of road tax.

Yes that makes sense. It would seem a bit extreme and expensive to go to the Notory 3 times a year with your, ITV, Road Tax and Insurance.
