My wife and I had an holiday in Spain from 21/8/21 to 4/9/2021 (15 Days) We now wish to return for another 15 days from February 5th. My question is, are we allowed to re-enter?

You are permitted a cumulative 90 days in a rolling period of 180 days.

As you can see if you come on 5th February you can stay for 78 days.
