What is booster Covid injection is more than 270 days. Is my full UK vaccination certificate OK for entry to Spain

There is no time limit on the booster. Only on the first and second jags.

"If you have received a booster, you are considered fully vaccinated for entry into Spain. As soon as you receive your booster, you are considered fully vaccinated with immediate effect. There is currently no expiry date for booster jabs."

When you print out your certificate it will show how long your vaccine is valid for.

You're fine. The 270 days only applies to the main vaccinations. There is no expiry date on the booster. 

Just apply online for a new cert and you get one with around another 3 months

Not quite. The vaccination validity of 270 days and the expiry date of the certificate are two separate things. If you print a new certificate it will still have the original dates of the 1st and 2nd vaccinations and if more than 270 days has passed, the vaccination is no longer accepted. However, if a person has had his/her booster there is no time limit. A valid certificate is still needed and every time you download a certificate the system renews/extends the expiry date but not the dates of the vaccinations. So, you need both; a certificate which has not expired and a 2nd vaccination which was received no more than 270 or a booster which is shown on the certificate.
