Hello, I'm attempting to make marmalade for the first time! At "home" in Ireland I could buy powdered Pectin, or even sure set sugar to make jam, it was great! Is this type of cookery aid available here on the Costa Bianca please?

Thanks

I've only ever seen small sachets of it in El Corte and Eroski, but you can buy larger quantities from Amazon.es.

You could also ask your local chemist if they can get it.

Before doing that, I suggest you do some experimenting with small batches. Orange pith and seeds contain more than enough pectin to set the marmalade, and adding some lemon juice helps the pectin to activate properly. You will of course have to strain out the pith and seeds before doing the final reduction.

Thànks Jim

Just ordered carton from amazon.es. chemist offered to order for me, but extremely expensive in comparison.

Not experienced enough to try "natural" way as you suggest though. If I'm successful after using pectin from a tub....then I'll try!!

Cheers

Pauline

I had a load of apricots and peaches last year and made a lot of jam. I got pectin sugar from Iceland (Tate & Lyle). At the time I could not find any in packets.

Iceland may order it in for you if you ask.

Thanks a mill!

Just a thought to save you legging it up and down the aisles, it is with all the other sugars. We Brits are sensible.

My local Spanish had never heard of it. Looked at me as if I had two heads.

As opposed to us Irish....I thought I'd get it anywhere! Guess with all the sunshine on the fruit, they don't need owt else to make jams!

Thanks again

I don't think many of them will actually make jams. They don't seem to go for the same sweet things we do. Personally I eat jam and marmalade regularly.

I try to pick up a load of oranges that are not quite perfect from the local market at the end of the day.

Some Spanish ladies certainly do make jams. I recently had some nice quince jelly given to me, very nice and not too sweet. I used it instead of jam in rice puddings, although it's also nice with cheese.

Our neighbour gives me free access to her nispero tree every year, and last year I made some nispero, ginger and almond jam which she said was really nice. I didn't bother with pectin and just added some lemon juice - it set perfectly OK.
