Traditional, historic Spain

Hi all. We were in Mallorca a few weeks ago for a much needed break. We found the unexpected highlights were wandering around the old quarter(s) where we went into ages-old monasteries and churches, and enjoyed the architecture. I know - rock 'n roll... :)
We're planning our next week on the mainland, off the tourist trap map. We're also planning on apartment (e.g. Airbnb) rather than repeating another hotel that has paper-thin walls and international catering. We love real Spain, including the food. Oh yeah - and the wine. :)
Does anyone have a recommendation as to where would tick those boxes yet be decently close to an airport served from the southeast of England?
