"As you are not vaccinated you are required to to take a fit to fly test before leaving Spain. It is recommended that this is a PCR test, but the cheaper antigen test is acceptable."

Lateral test to be let on the plane? Which airline?

No it is not a test to allow you on to a plane. It is a test to allow you back into the U.K. They are the rules stipulated by the U.K. government.

The government of every country currently have their own set of regulations. It is the carriers responsibility to ensure that those rules are enforced. If the airlines/ferries make an error  and the passenger does not pass the entry requirements, they are duty bound by law to return the passenger to their country of origin without charge.

So the answer to you question is every airline and every ferry company require you to have a pre departure test. The testing companies themselves call them them fit to fly when you order the test.

I think your nearest centres are Dam Health in Cabo Roig or Imed, Habaneras.

Cost is around 90€
