Residency or not.
Can anyone explain the benefits of changing from being a non resident to applying for residency and what the process involves.

As Pete and Nicola have said, you don't have a choice. You're either a resident or you're not. If resident, you have to take out residencia.
As regards advantages, what do you expect? You can join the pensionistas club and get cheap trips and holidays. You can move onto the Spanish health system. You can get on the padron and help your municipality to get a larger grant from central government. You can then take advantage of any offers available from your municipality. If a Brexit deal comes to fruition, your rights of residency etc will be protected.
Depending on your personal circumstances, it might be cheaper to pay tax here than in the UK.
