Am I correct in thinking that a Solicitor draws up the Will which then has to got to a Notary for signature and only then does it become a legal document.
What are the associated costs? I imagine Solicitors can charge whatever they like but what would one expect to pay?
Are Notary fees all the same?

You're not correct - you don't need a solicitor - unless you want to waste money:
