Your UK phone should give you free use in Spain, so may be no need for a Spanish SIM.  There are very few things that you need a Spanish number for but you could always get one while you are here if needed.  I found Orange the best option.

Hi, have a look at DigiMobil, their Digicombo plan starts at €3 for 100 minutes, and 1gb of data.  You don't have to top up each month, but you will then revert to pay as you go rates, but can opt back in at any time.

Hi, or you could use your UK phone for calls and data and a Spanish SIM without monthly costs for the very few cases you need one. Have a look at pepephone for that: https://www.pepephone.com/tarifas-moviles/la-que-no-tiene-cuotas
