I travel this route frequently for over 50 years. Usually December is no issue. In any case I would not recommend the Zaragoza/Teruel way and, instead, travel via Vitoria-Burgos-Madrid. In Madrid mInd the R-tagged motorway (toll road w/o significant advantage. No toll except 10,45 on the A68. Road maintenace is unbeatable. Plenty affordable lodging along the way, but off the motorway. I suggesst taking exit 17 from the A3 and you run into a large shopping center incl. a cheap filling station. Fill up your tank before going on any motorway and never leave your vehicle unattended in rest areas.
