From my small knowledge (having had several complicated problems with land here) would suggest in the first instance that you contact reputable agents and find a good - bi-lingual? - solicitor. There are many of these here. 'Buying two largish plots' indicates that you are thinking of a rural area. To the best of my knowledge, in an area classified as 'rural' land, not 'urban', you need a minimum of 10.000,00 (ten thousand) square metres to erect so much as a chicken coop, even if the local Town Hall (ayuntamiento) would permit it, which is not certain. Also there will be no services there, or at the least, highly unlikely, so you may like to consider the cost of installation of power, water etc. As well, I recently read that, especially in rural areas, you should check again with the ayuntamiento as to whether they will permit you to 'let' it - I understand that there may be an issue with possible competition with existing rural business. How accurate any of this is, I cannot say, but we bought in a rural area and discovered the difficulties afterwards. All my advice would be is to treble check absolutely everything you want to do - and do not assume that because in UK we would not consider XY or Z to be an issue, that the same will apply here. And we had a good bilingual solicitor, but misunderstandings only became apparent some time later.
