There are references on this forum to several insurance brokers, so just do a browse or search.
Once the car is in your name, you'll receive notification when car tax is due.
We come under Orihuela and have two cars - the tax on each is ~€50.
You'll need a periodic ITV (MOT). Try to get a car which won't need the ITV renewing too soon.
The biggest potential problem is getting the car into your name. In Spain you have to pay transfer tax and then a fee for doing the transfer. Again there's some good information on the forum.
I'd recommend buying from a dealer who will do the transfer for you, and include the costs for this in the purchase price.
