I have an Irish passport but wife has UK only. We are both retired and are looking stay longer than the 90 days. Can anyone advise what the processes and options are available to us. We don't want to be subject to Spanish Tax regime regarding worldwide assets etc.

This is another question that gets asked and answered many times. Your wife can accompany you and the 90 in 180 day rule won't affect her if she is with you but will if she travels on her own.

All EU citizens (including Irish and accompanying family) are limited to 90 days in one visit but can stay longer if they register their stay with the National Police in the province they are staying in by showing they have sufficient funds(minimum 600 euro per month each) and are covered for healthcare (the EHIC/GHIC only covers you for up to 90 days). If you stay over 183 days you could be classed as a tax paying resident whether you register or not and be taxed for the year you spend over 183 days on all your world wide income.

But there's no problem of your wife accompanying you if you have a EU passport.

Further to Marcliff's excellent advice here is a link to the Spanish government information about EU registration if you want to stay longer than 90 days.
