Can anyone tell me if we bring our Freeview UK TV's to Spain will they still work once plugged into an ariel ?

Also we have a very old box which we think is Freeview and when we press the Lang button on the remote any dubbed UK or US shows automatically switch to English - is this standard ?

In short no to freeview, this is only available in the UK as a digital signal. Spain has it's own version called TDT which you will need to buy a TDT box and plug into the aerial. TDT content is ok, with some shows that are UK or USA made and quite often you can hit the language button and get it in English.

If you want actual UK channels though, hands down the best option is to get a satellite dish and freesat box, this will give you all the BBCs, ITVs and so forth. No idea who services your area but it shouldn't be too hard to find an installer. It's just a one off payment for the dish, installation and box and you should be set to go. Others will likely recommend watching via an android or internet based system which I wouldn't bother with personally but each to their own.

Some TVs with a digital tuner, bought in the UK can work in Spain with TDT.

But if that tuner is solely for Freeview, it may still work, but changing languages from dubbed Spanish to original english, may not work, as Freeview only looks for English, Welsh and Gaelic language options, and not the 4 or 5 language options used in Spain (DOS, MUL, VO, ORIG)
