This question may have already been answered but I am a bit tech phobic
Is it possible once I have bought a car (1st problem) can I get open drive insurance so family members can drive when they are in Spain. We are non resident & have an insurance history.

Spanish insurance covers the car rather than the driver. Most policies will allow anyone over 25yo, with a full licence, to drive your car with your permission. However, it's recommended that they carry proof in the car. It's not a legal requirement but will save a lot of hassle at the roadside.

I have just completed this process myself.
