You can only stay for 90 days in any rolling 180 day period.  The 180 days starts when you enter a Schengen country.  Once you have used your 90 days you cannot return until the 180 day period ends.  For example, if you came for May and June (61 days) and then 29 days in August (total 90 days) you could not return until 28 October i.e. the 180 day period ends on 27 October.

Are the Guardia stamping British passports so they know how long you have been in Spain ?

They stamped mine but that is probably largely irrelevant as the technologies involved can track how long you've spent in Spain / Schengen and ETIAS will make sure of that:

Yes, they're stamping British passports, without Spanish residency, to indicate date of entry/exit into the Schengen area, in this case Spain.

It's possible that by 2023 they may be able to calculate the 90 days in 180 automatically, for all travellers, in every Schengen port of entry but I wouldn't hold your breath.
