Is proof of holiday insurance required to enter Spain?

This link may be of interest to you. It has always been advised to have holiday insurance even when the UK was part of the EU/EEA. I would not recommend any travel without insurance:

In answer to your question without any elaboration, you do not need proof of holiday insurance to enter Spain.
