Do you already have Spanish residency/TIE? Without it, you won't be able to exceed 90 days in a rolling 180 days period in the Schengen Travel Zone from 1 January 2021, when UK citizens become TCNs (Third Country Nationals).
If you move permanently to Spain this year, you can obtain a TIE with protection of citizens' rights (healthcare and pension) under the Brexit Withdrawal Agreement; the financial requirements for obtaining residency this year, while the EU rules still apply to UK citizens, are much lower. From 1 January 2021, applying for residency as a TCN, the financial requirements are income of Eu 26,000 per annum/Eu 2,100 per month.
In order to prove that you've been living in Spain permanently, and in addition to the financial requirements and healthcare, you also need to show transactions going through your Spanish bank account; you also need to be on the Padron. To prove that you are covered for healthcare, you need either an S1 (if you're retired or have an exportable benefit), private healthcare
if you're not working, or Spanish social security contributions if
you're working in Spain.
Of course, if you're lucky enough to have an Irish passport, you can disregard everything above! ;o)
