All medical centres have nurses who regularly take bloods for testing. You need to see the receptionist at your health centre or get a request from your GP. These are usually done at 0800 as the bloods are taken to the laboratory at the hospital and the results sent to your GP.
Our nurses do it every day Mon to Thu at 0800 and you get the appointment time and date attached to your blood test request issued by the GP and simply hand it to the nurses. Some are first come first served and others will call you by name.
The same as UK, you will only be called in to your GP if there is a problem.
When you say "comes under the S1 agreement" have you registered it with the INSS and got a SIP card? In which case no problem as you will have been allocated a health centre and a GP shown on the back of the card.
If a necessary and frequent blood test requirement you can use your GHIC or EHIC and the clinic will do it and the one for San Luis is on Calle Pujol.
