It is a little changed at the airport post covid but pretty straightforward and most of the staff are helpful. Your wife will need to have completed the Spanish Health form and have either the QR code on her phone or a printed copy. That will be checked at the airport in the UK as well as Spain. We travelled last month so the only thing we did not have to do, which is necessary now, is to show any proof of vaccination, which your wife has so that is fine.
There is a desk at arrivals where she will have to show the QR code and vaccination proof. She will then go past a temperature sensor on the way to picking up her luggage, again that is nothing complicated, she may walk past it without noticing. If she does have a high temperature she will be stopped but that's unlikely.
How long to get through the airport after landing? that's hard to say, we took 20 minutes but the airport was pretty deserted. It really depends upon the number of flights but they are still a lot down on normal years so I doubt there will be much of a delay (could be famous last words!).
The other change this year is passport control if you are not residents. After going through the automated passport readers you have to stop and get your passport stamped. On the way out there is another stamp. Neither took us any length of time.
We use a parking company at Alicante airport, the procedure is to ring them once we have our luggage and they bring the car to the departures area. The free waiting time in the car park has changed to 10 minutes, so if you are picking your wife up by car be aware of the change. It is possible to drive around and come back in again, or it was in last month.
