Thursday is a normal day. Good Friday most are open with reduced hours up to 1430 or so and back to normal on Saturday. If you put the supermarket you use with .es (eg Consum.es) and enter your postcode, they will tell you the days they are open.

Mercadona will close on Good Friday and Easter Monday but most will open reduced hours on the Monday.

Just be aware that some sites aren't reliable.

They probably need updating?

I went on Carrefour site, and it stated that particular day, they were open.

We went and,and they were closed.

Easter is peak holiday time, the population and the road traffic increases tenfold - supermarkets open because of the huge demand.
With the exception of Mercadona as already explained  by Marcliff earlier in the thread, they are open for the next three Sundays - so the next date they are all closed isthe Red Day on  1st May

Depending on the number of descending Madrileños the shelves can get bare very quickly.
