Ferry to Santander then my route would be toward Valladolid with an overnight in the area. Then you have all day the following day via Madrid and Albacete, plenty of time for stops for the dogs etc.
If you choose that option let me know and I can supply you with my number which will give you a discount on Brittany Ferries.

Pet friendly cabins get booked up very quickly and their website says you need to contact them if you have more than one pet. It could be that your dogs have to stay in a kennel for the entire trip which is 20 hours.
We chose to come via Eurotunnel so the dogs could be with us all the time and we could stop off as and when needed but I appreciate it adds miles in the UK.
The cabins do get booked quickly.
I would also advise carefully considering the size of kennel. I have a 20kg Breton and on one crossing I could only get a small kennel. These are above the large kennels, about 5 feet from the ground. This meant having to lift her into the kennel at this height, a tricky manoeuvre! Once in, this size of kennel was really too small for a dog of her size.
The dogs can walk into the larger kennels easily and they are substantially larger.
On the good side, you can access the kennels during the crossing any time you like for as long as you like. There is a dedicated area for exercising them and a large seating area outside the kennels.
