I'm going for some shopping tomorrow and will use my Spanish bank debit card, is it possible to get cash back when I pay like in the UK?

I agree, as usual, with Ray. No Spanish shop will give you cash back.
Depending on which bank you're with, you might be able to draw cash from another bank's ATM without incurring charges. For example, I'm with Bankia, but I normally use a Santander ATM as that's nearer to me. I think it's three free withdrawals per month.
