other than hi-vis jackets and a warning triangle is there anything else I must carry in the car from a legal perspective?
My number plates have the UK flag and UK letters printed on them. Is that sufficient?

First aid kit, to include as far as I am aware, eye pads.

Beam deflectors, spare tyre, possibly a temporary circulation permit, hi-viz for each person in the vehicle

This comment doesn't apply to the original poster, but this is a good opportunity to remind folks that the French authorities introduced a law last year whereby motorists using roads in various 'mountainous' departments between Nov 1st and March 31st had to ensure their cars were fitted with winter tyres (presumably stipled or studded) or carry tyre chains in the vehicle.
As far as travelling from the UK to Spain is concerned, this mainly affects the eastern motorway route through Clermont Ferrand to Beziers. They haven't said yet if it will apply this year, but I wouldn't be surprised.

Triangles are OK until 2026 I think and they are still required in France
You will also need your V5 (not a copy).
Spare bulbs are a good idea
