Hello. Does anyone know of an Italian restaurant in Moraira or Calpe that has mozzarella which uses a vegetable or microbial rennet?

With the very greatest respect, I rather think you are hoping for the moon here. Rennet, technically, is produced from stomach linings of cattle originally. And pizza is an Italian confection, not Spanish. Although there are the Valencian cocas which, although smaller, are similar and unlikely to utilise mozzarellas!

I deduce that you may be Vegan? The Spanish are remarkably good at catering for this type of restriction, but unlikely in a pizza parloyr I would think; you may ne able to source items in a supermarket or one of the myriad whole food stores.
