Pet travel requirements

Hi
I wonder if anybody can give me some advice please , a new experience for us as we have made the decision to travel by road with our dogs to Spain at the end of September to their new home in Spain , here in the UK they travel in the boot of the car with a dog guard stopping them from moving forward into the car , is this allowed while we travel through France and Spain or do they need to be in a crate ?
