Buying a car and leaving it in Torrevieja for non-resident

I recently bought a place in Torrevieja and routinely rent a car for use whilst here. I'm thinking of buying one, insuring it in Spain, and using it when I come here. Does anyone know:
1. Reputable second hand car dealers.
2. Is there a company/ service provider that will routinely keep a car ticking over, do the ITV tests etc and pick people up from the airport? Someone even doing this on a partial basis might be fine.
3. Is there an issue getting insurance for a non-resident (non-resident for now).
