What are the clear advantages of being a resident to a non-resident in Spain .we are going to be living in Spain from the end of May 2019 .
If you live in Spain, you have to become a resident, no choice.

I've been told by our gestoria today that she can't make any residency applications from the UK at the moment.
I think you mean from UK citizens not "the UK" !
Does this include those wanting a NIE number but not residencia?

As Cheryl said, you don't have a choice. It's a legal requirement to register as a resident. If you don't, then you'll have a lot more hoops to jump through to be able to stay in Spain.
If you must see the advantages, then they're detailed in:
The Consulate told me that some areas are not granting appointments, the usual vague reply.Perhaps Jim can say if people in south costa blanca are being held up ,not for residencia, but a NIE number?
