As Spain and France are both on the UK´s Amber travel list, you need to comply with the rules for Amber countries:
"Private vehicles or coaches travelling through amber or red list countries and territories
"If you are travelling to England in a private vehicle, the rules of the countries and territories you drive through apply. For example, if you drive through an amber list country, then you must follow the amber list rules when you arrive in England.
"This applies whether you stop in the country or territory or not. You need to record the countries and territories you drive through on your passenger locator form."
These rules also apply to Scotland, Wales and Northern Ireland.
You also need to comply with entry requirements to France:

If it´s going to take longer than 72 hours for you to travel from Spain to the UK, you´ll also need to take an Antigen test in France (the UK is on France´s Amber list).
You don´t say which route you´re planning, but the Spanish regions that have a night time curfew in place most likely to affect your journey are Aragón and Catalonia, and Valencia has a number of municipality night curfews. I believe you are still allowed to travel, but if stopped, you will need to show your vaccination certificate, or negative Antigen or PCR test, and the tickets for your onward journey.
