You are likely to struggle unfortunately. Unless you have a working knowledge of Spanish, the possibility of employment is remote. There are already a plethora of firms offering all kinds of services to the ex-pats. There will be a few English run hairdressing salons around and perhaps you could rent a chair. However, to be legal you would both need to register as ‘autonomo’, self-employed, which will immediately bring you into the Spanish social security and tax system; the fines for working illegally will not be funny. It isn’t really likely that there will be any official employment with a contract and health care and so on. You will also have to have private healthcare unless you are in receipt of UK pension - the EHIC is strictly for tourist emergency use, although some places will let you use it.
