I would like to ask about the tax we pay yearly for all non-rental periods (as those for a holiday rental are paid quarterly).

As far as I know, we pay it for a previous year. What is a deadline then?
Is it 31st of December of a next year (I mean when we pay for 2018 it will be31.12. 2019) or is it 15th of of January 2020 - as in case of payment for holiday rentals in the 4th quarter of 2019?

Presumably you are referring to Non Resident Tax, if that is the case the Deadline for payments for 2018 is 31/12/2019.

As John says, it's 31st December - unless you're doing it the easy way with an electronic certificate, in which case it's 23rd December.
