Using a UK phone that is unlocked

Hiya we are looking to relocate middle of next year and I was wondering if an unlocked UK phone would work with a Spa ish SIM. If so what is best SIM/network to go for?

An unlocked phone should work anywhere, which network to use really depends on coverage in your exact location.
There are only 3 main players, Orange, Vodafone, and Movistar, all others work on the back of one of those.
Generaly Moviestar seems to have the best coverage and tbere is a 3rd party operator called Lobster which works on that network and is rapidly gaining traction, partly because they are very competative on price but also because they operate wholly in English.

Unlocked phone will defo work.
You will have plenty of choices.......use an English comparison site for the best deals in Spain and pick the one that suits you best.
Most companies have service in English too
