Can anyone tell me how to translate a document/invoice from Spanish to English on Windows 10?

Have you tried google translate, just google it, please bear in mind that I am old. Good luck.
An invoice will usually be a very simple document so assuming you have a smartphone fire up Google translate then tap 'camera' and point it at it.

If you are using a Microsoft Office product then you may not be aware that translation is now built in.
