I can understand you wanting to wait until Brexit is sorted, but if you don't get residency here before the end of a Brexit transition period, then you'll have to prove an income of about €2400 per month before you'd be allowed a visa to move here.

As per a recent thread on this forum, there are (at least) two downside financial risks to committing to a move before Brexit is resolved ...
- it has not yet been agreed that the UK will continue to reimburse the Spanish NHS for healthcare provided to Brits after December this year. If this agreement is not made, you need to budget for an extra 2000 Euros per person per year for Convenio Especial costs (in effect, to pay into the Spanish NHS) at age 66 or above. Below the age of 66, the cost is (I believe) nearer to 800 Euros per person per year.
- Brits in receipt of UK state pensions who are legally Resident overseas in non-EU countries currently do NOT receive annual inflation-related pension increases. It is not yet clear if, after Brexit, Brits legally Resident in the EU will receive the increases. At a (conservative) increase of 2% per year, this would reduce the buying power of your state pension by around 25% over 10 years (regardless of exchange rate fluctuations).
