Hi Lizzie and welcome to the forum,
You'll struggle to find much of a selection in Benijofar itself, although you could try the Chinese bazaars. If you need to buy these items nearby, there's a shop called "UK Supplies Direct", about a 10 minute drive away at Calle Los Arcos in Ciudad Quesada. There are a couple of stores along the same side of the road that sell curtains, bed linen, towels etc, such as "Yorkshire Linen Co.". You can usually get roadside parking there.
Also, if you bypass Quesada and continue along the CV-905, at the next roundabout, you come to shops at the Doña Pepa urbanisation - turn left at the roundabout and take the first right turn and you come to a large "Jysk" homeware store where you should be able to get everything you need.
Alternatively, there's an "Ikea" store in Murcia, about a 45 minutes drive, but if you'd rather not drive, you can take coach trips for all day shopping:

One thing to note if you're shopping for bed linen in Ikea, though, is that it's continental sizing so the pillowcases, in particular, won't fit UK pillows.
For mattresses, the closest to Benijofar is "Beds, Beds, Beds" at an industrial estate on the outskirts of Formentera del Segura: Polígono Industrial los Barrios, Avenida de los Álamos, 3b, 03170, Heradades. They're open 10am to 4pm weekdays and 10am to 1pm on Saturdays - Tel: 966 79 24 49.

If you don’t want to travel too far then Between Benijofar and Benimar(Tommys Bar) , there’s some shops on the left hand side. One is a Mi Electro where you’ll find all the electrical appliances you need. The Big Chino Shop is also excellent for household items.

If you´re going to shop at Mi Electro, I´d suggest doing it online, as their web prices are cheaper. I was able to negotiate a discount, based on the website price, on a fridge freezer, but that may not be possible on small electricals. Here´s the link for toasters (tostadoras), but they don´t appear to stock kettles (hervidores):

When did they close? They were there when I went to both of them 2 weeks ago - I bought curtains in YorkshireLinen. They both moved locations - about 3 years ago! - but both of them moved to bigger units on the same road, Calle Los Arcos 🤔

I've checked this morning and both these stores are OPEN and trading in the location that I previously advised. In fact, the shops are next door to each other.
