How do I start the residency process? My wife has retired but I’m still working and probably will be for another 4 yrs max. I’ve heard of the non- lucrative visa. So my question is if my wife can start the process and include part of my income towards her application. Her pension is not enough on its own.

If your spouse is a retired UK passport holder and wants to move to Spain permanently she can apply for the non lucrative visa from the Spanish consulate in the UK.
The requirements for the non lucrative visa application is that she has a rock solid income source from uk retirement pension, private pensions etc. A part payment from another person's work income would not be acceptable.
The income requirements for the first person is around €28,000 per annum plus around €6,500 for each additional family member.
If you want to live in Spain and work you will need to apply for and secure a position first and then your prospective employer will need to apply for a work visa on your behalf from the Spanish consulate in the UK.
You would both need healthcare.
Your spouse can apply for healthcare through the S1 healthcare scheme which is paid for by the UK government.
You would need Private healthcare or piggyback on your wifes S1 healthcare application.

Not sure why you question is under a post about residency applications, but the answer to your question is there is sports centre on Calle Niagara in Playa Flamenca that has an indoor heated pool.
