Am looking to move out to Spain in August and would like to know a bit more about taxes and best residency visa for us.  We are a family of 3.  We would not be working but daughter will be going to international school.  We have a small house in Montesinos but would also be looking to buy another once settled

That's a big topic.

Assuming you hold British passports, and that you don't plan to work, you will need Non-Lucrative visas (NLVs), followed by TIEs (Residency cards).

Visas (FAQ) (exteriores.gob.es)

The NLV/TIE process requires significant income/assets, and has implications for healthcare, income tax (payable to Spain) and Capital Gains Tax (potentially payable to Spain on sale of your UK home).

The sunshine isn't free.

You might want to work out what you do/don't know, and then ask more targeted questions.

I think you need to contact the Spanish Consul in Manchester or London with regard to the NLV which has to be processed on the UK, not Spain.

(That will be €41,689.44 per annum for a family of 3) That could be income, per annum,  or combination of savings and income. Each member will also need to have full private healthcare paid for a full year. 

If you gain the NLV you can move over to Spain and apply for residency within the first 90 days.

Wow! I wonder how many who went through the process prior to Brexit could afford this now.
