Hello,
We brought our black Lurcher over and she loves it although she does become almost nocturnal in the summers and we did have some problems with them going off their food for a while (also have a Sprollie).  There are not many beaches which allow dogs but out of high season this often seems to be ignored and rules change all the time. If walking them on pavements, great care needs to be taken so their feet don´t burn. Most restaurants accept dogs in the outside areas and will provide water for them. Processionary caterpillars can be fatal for dogs but in main areas the authorities treat the trees ( not 100% effective) and if going "off piste" be very careful from roughly January to April when they come down from the pine trees where the nests are like fluffy cotton wool up to about fist size. There are English speaking vets in many areas.
If you are driving via the tunnel, this is very easy, with exercise areas both sides and usually no need to pre-book dog friendly hotels along the route. I have no experience of dogs on ferries but I personally wouldn´t fly my dogs over. No idea what will change after Brexit.
Lastly, the Spanish don´t need much of an excuse to let off very loud fireworks all year round and although our Lurcher is quite nervous (relying on her speed to run away and ask questions later), we are lucky that they don´t bother her.

All the best for the future.

We have GSD in Orihuela Costa. I would not fly (can't from NE England). I use ferry to Le Havre so she shares cabin with me and drive down via Bayonne on m/ways, takes 3 days from NE England. I use cheap hotels eg F1 or Premiere Classe and enjoy the journey. Other ferries to France require dog in Kennels - tunnel inconvenient for me.

Key things in addition to previous reply are

1. register with local Vet - if you have Spanish phone your dog's chip can be registered in Spain)

2. use tic etc treatment (we use Scalibor collar and Advocate drops

3. get heartworm injection

4. use Leshmaniasis (check spelling) treatment from Vet (we use oral gunge but you can get series of injections).

Our dog gets star treatment from everywhere we visit and loves it.

Chris
