As my wife and I hope to be intending retirees to Spain (we are both over 65), is it compulsory that we take out private health insurance as a condition of our Residencia application?

If you are UK nationals and over 65 you can get a form from the UK saying you no longer have NHS treatment in England and can then get it here. No need for private insurance.
