Can anyone advise me if supermarkets and restaurants are shut all day Good Friday, Easter Sunday and Monday in Torrevieja centre or do they just shut early on some of these days?

Some close on Thursday, Friday and Monday but will be open Saturday and Sunday. Others close early on Thursday and others open all day Monday. You'd need to look at the store websites closer to the dates.
Carrefour will be open on both Easter Sunday and Easter Monday as usual.
None of the restaurants close unless they are on holiday but that would be unusual
