With regard to the address on your UK driving licence. If you look at the DVLA website, you will see that if you move abroad, then you have to return your licence, as it is not possible to change the address to an overseas one. You have 6 months to do this. It is therefore best to apply for a Spanish licence soon, using a solicitor or company who provide this service. They will tell you about all the documents you need. As it involves 2 visits to Alicante, it is worth paying somebody to do it for you. Your UK licence will be sent back to DVLA on the issuing of the Spanish one.
By the way, the rules in Spain state that once you are resident for 2 years you must change your licence over, although many people don't do this and one day they may regret it!
