Anyone know what happened to the development next to Mercadona. Was all guns blazing early this year, but hasn't moved now for 6 mths

If you’re referring to the one next to Mercadona in Playa Flamenca be prepared for a long wait, as the developers have not yet gained oermission to build on this land. The sales centre was hurriedly built, without permission, but is currently being used as a sales centre for other projects in the region - if you ask for info on the development at PF there isn’t any for the sales team to hand out!

Was curious as they've prepared the site which must have been hell for the residents next to the plot

It is no longer simple to just decide to come and work here.
If you are a UK passport holder, you would need to obtain a firm offer of employment from a legal established company here; they would then apply on your behalf for the relevant visa, which may take some time. Any work has first to be offered to a European citizen.
If you wanted to retire here, you would need to apply for a non lucrative visa from the Spanish Consulate in UK, and demonstrate an income of some 28,000 euros per annum, plus full private healthcare.
This is because UK is no longer a member of the EU, so the rules applicable to the rest of the world now apply.

Unfortunately, yes. The alternative is to set up as ‘autonomo’, self employed, but this again is not as easy as uk, you can’t just decide to do it. You would need to apply for a working visa, and provide a business plan. You would have to demonstrate funds or income to support yourself, plus you would immediately become liable for social security contributions. You need an adviser, a gestor, for required three monthly tax returns. IVA, VAT is compulsory here also.
